This has to be one of my favorite ways to prepare chicken. The flavor is amazing and we all love it. It is a regular in our meal rotation. I came up with this recipe when I was about 17 and living with some friends. She had made a version, but it was kinda tasteless. So the next time, I took the reins and played with the seasoning a bit and the above is what happened. Pretty awesome if I do say so myself.
I highly recommend prepping this chicken the day you get it home from the grocery store. Saves a lot of time when you are ready to cook it. It’s so easy and SOOO delicious! There are 3 different ways you can cook it and they are all easy and yummy! Be sure to read the very end of the recipe for tips!
- 3 boneless, skinless chicken breasts (fat removed)
- 8 cloves of garlic, minced (I buy the jar of minced garlic)
- Seasoned salt
- Olive oil
24 hours prior to cooking:
In a zip lock bag, add chicken, garlic, seasoned salt, parsley, salt, pepper, and olive oil. Add enough olive oil to coat the chicken. I do not measure anything, I just eyeball it. Close bag and shake it up well, making sure to massage the seasonings into each piece of chicken. Re-open bag to let out air and reseal. Place on a plate (to prevent leakage) and place in fridge until ready to cook.
Preheat oven to 375. Place seasoned chicken in a baking dish and cover with tin foil. Place chicken in oven until almost done, approximately 30 minutes depending on size of chicken. Uncover until brown. I sometimes like to flip them over and get them brown on both sides.
Turn on air fryer at pre-set temp (I believe mine is 370), place chicken in basket or on top rack, put in air fryer. Set timer for 15 minutes. Flip chicken, cook another 15 minutes.
This is pretty self explanatory. We used our outside gas grill.
Cook time can be 30-45 minutes, possibly longer depending on method and your machine(s). But each method is SO good and full of flavor.

Tips: My basic seasonings for meat are: garlic, seasoned salt, salt, and pepper. However, feel free to experiment with this. Thyme or rosemary with the minced garlic would be heavenly! A little paprika and chives instead of parsley would also be good. But you must keep the 8 cloves of minced garlic, otherwise you just have chicken!
I served this last night with sweet corn (from a can) and a side salad with Bolthouse ranch dressing. Total meal 5 points!! My meal break down is as follows: Chicken – 1 point Corn with added light butter – 2 points Side salad with dressing – 2 points
You could make this a 1 pan dinner by cooking it in the oven and adding some asparagus, broccoli, or your favorite vegetable medley with it. The veggies will roast while the chicken is cooking. You can use the same principle in the air fryer. Or make a veggie pocket with tin foil and throw it on the grill. Leftovers are WONDERFUL! I use it in wraps, salads, and sandwiches. So much flavor for little effort.
